Try this vegan alternative to scrambled eggs - perfect for breakfast!
Ingredients:
To prepare the spice mixture that gives the egg flavor:
2 tablespoons of nutritional yeast
1 tablespoon black salt Kala Namak (salt with a characteristic sulfur aroma)
1 teaspoon of turmeric
3/4 teaspoon garlic powder
1 teaspoon of onion powder
1/2 teaspoon freshly ground black pepper
1/4 teaspoon ground paprika
To prepare the tofu:
1 teaspoon of oil
1/2 cup chopped red pepper
1/4 cup chopped onion leaves
1/4 cup vegetables of your choice
400g pack of vegan hard tofu cheese
1/4 cup of water
1 ½ tablespoons egg flavoring spice mix (see this recipe for mixing instructions)
1/4 teaspoon of salt
1/4 teaspoon freshly ground black pepper
For garnishing onion leaves or coriander
Directions:
1. To make the egg flavoring spice mix: Combine the above ingredients for this spice mix in a bowl and set aside (or store in an airtight glass container for up to 2 months).
2. Heat a pan over medium heat. Add the oil, then add the vegetables and fry until lightly browned.
3. Cut the block of tofu. Place about a quarter of the tofu in a blender. Also add 1 ½ tablespoons of the aforementioned spice mix and 1/4 cup of water. Blend until smooth.
4. You may also need more water. Add 1-2 tablespoons of water in several stages and beat until the mass becomes extremely creamy.
5. Then pour this creamy mixture into the pan and mix well.
6. As soon as it starts to boil, add the rest of the crumbled tofu block and mix well.
7. Cook until everything is evenly distributed and all the tofu is evenly yellow. Taste and add more salt and spices if needed. Remove from heat.
8. Just before serving, sprinkle a little more salt, black pepper, onion leaves and a mixture of spices that give the egg a taste.
