Ingredients:
1/2 cup red lentils
3 tablespoons of oil
3 tablespoons of maple syrup
1/2 cup chocolate chips
4 spoons of sugar
1/3 cup nut butter
1 ½ teaspoons of vanilla extract
1/4 cup flour of your choice
1/2 teaspoon of salt
1/2 teaspoon baking powder
Directions:
1. Line the baking form with baking paper. Heat the oven to 180 degrees.
2. Wash the red lentils. Drain and put in a pot. Add 1.5 cups of water and cook with the pot partially covered (on medium heat). Cook for about 12-13 minutes (total, including boiling time). Stir once. Let it cool for a few minutes, then pour off the excess water from the pot (although there should be almost no water). Place in a food processor or blender.
3. Heat the maple syrup and oil in a pan over medium heat. When heated, add chocolate and sugar and mix. Remove from heat. Continue stirring until the chocolate melts.
4. Pour the melted chocolate and other remaining ingredients into a food processor. Beat until smooth. You can add 1 tablespoon of cocoa powder.
5. Pour into the prepared baking dish. Sprinkle 2 tablespoons of chocolate chips on top and stir. Sprinkle more on top. Bake for 32-35 minutes. Baking a little longer will make the edges firmer and crispier. Check with a toothpick that the center of the brownie is not too soft.
6. Allow to cool for 15 minutes before slicing and serving. Store in the refrigerator for up to 4 days.
