Try this Tex Mex inspired salad!
Ingredients:
700 g of ground beef
1 onion, diced
½ can of chopped jalapeno (chalapa) peppers
30 g Mexican Taco Seasoning Mix
2 cups of chopped lettuce
1 tomato, chopped
½ cup shredded cheddar cheese
¼ cup Mexican tomato salsa
¼ cup low-fat sour cream
1 avocado - peeled, pitted and sliced
Directions:
1. Cook and stir-fry the ground beef, onion, and jalapeno (chalapa) pepper in a skillet over medium-high heat until the meat is browned (7-10 minutes). Stir in Mexican Taco Seasoning; saute until all flavors combine (about 5 minutes).
2. In a large bowl, combine the meat mixture, shredded lettuce, tomato, cheddar cheese, salsa and sour cream. Divide the mixture into 4 bowls and top each with avocado slices.
