    Baked Veggie Bites

    Ingredients:


    1½ cups mashed potatoes
    ½ cup diced peppers
    ½ cup chopped broccoli florets
    1 egg - beaten
    ½ cup plain panko breadcrumbs (you can use other breadcrumbs of your choice)
    ½ cup shredded cheddar cheese
    ½ teaspoon of onion powder
    ½ teaspoon of garlic powder

    Directions:


    1. Heat the oven to 200 degrees. Prepare a baking tray (or cupcake tin) lined with baking paper.
    2. Mix all ingredients well in a large bowl.
    3. Scoop out a little of the mixture with a spoon and form a ball with your hands. Place it on a baking sheet. Repeat until you have formed about 24 balls.
    4. Bake for 20-23 minutes in the preheated oven until lightly browned.
    5. Serve the vegetable bites while still warm. Delicious!
