Ingredients:
100g feta cheese in brine, drained and crumbled (about 1 cup)
1/4 cup whole milk (Greek) yogurt
2 tablespoons of olive oil
18 pieces of whole grain French baguette, toasted
1/2 teaspoon ground pepper
2 spoons of honey
1 ½ tablespoons chopped assorted fresh herbs (eg dill, parsley)
Lemon zest, grated (optional)
Directions:
Blend feta, yogurt, and 1 tablespoon oil in a food processor; beat until smooth and creamy (4-5 minutes). Spread feta mixture on each slice of toast; sprinkle with pepper and drizzle with honey. Sprinkle herbs on top. Garnish with a lemon peel if desired. Drizzle with remaining 1 tablespoon oil. Delicious!
