    Carrot Energy Bites For Kids

    Ingredients:


    3 carrots
    1 cup oatmeal
    1 cup of sunflower seeds
    ½ cup of dates
    1 tablespoon of coconut oil
    1 teaspoon of cinnamon
    ½ teaspoon dried ginger
    Coconut flakes

    Directions:


    1. Place the carrots in a food processor and chop well.
    2. Add the rest of the ingredients (except the coconut) and blend until combined. This may take some time (about 5 minutes).
    3. Form balls using a teaspoon. The mixture will be quite sticky (the liquid released from the carrots), but rolling in the coconut flakes will make the texture firmer. By the way, if you wet your hands, the mixture will not stick to your fingers.
    4. Roll the balls in coconut shavings. However, this step is not necessary - you can leave some of the balls without the coconut!
    5. Refrigerate. Delicious!
