    Broccoli Rice Casserole

    Ingredients:


    5 medium broccoli heads, cut into bite-sized pieces
    1 tablespoon ghee butter
    2 teaspoons of your favorite spice mix
    1 cup basmati rice
    2¼ cups water
    2 celery stalks (cut into bite-sized pieces)
    200 ml of vegetable broth
    Freshly ground black pepper

    Directions:

    1. Lightly fry the spice mixture in ghee in a small pot. Add rice and water.
    2. Boil the rice (tightly covered) in water for five minutes. Pour this mixture into a large ovenproof casserole dish.
    3. Add celery and broccoli, pour vegetable broth. Cover and simmer at 200 degrees for 25 minutes.
    4. Season with salt and pepper. Delicious!
