    Cream of Vegetable Soup

    Ingredients:


    1 tablespoon of melted ghee
    2 teaspoons of your favorite spice blend
    2 stalks of celery
    2 carrots
    1 zucchini
    ½ cup Radiant Mung Beans (Moong Dal, Mung Dahl)
    3 cups of water
    1 teaspoon of salt
    ½ teaspoon paprika seasoning
    3 tablespoons of fresh chopped parsley
    Freshly ground black pepper

    Directions:


    1. Wash the mung beans. Wash and cut the vegetables.
    2. Heat the ghee in a large pot and fry the spice mixture.
    3. Add vegetables, beans and 3 cups of water. Cook on low heat for 25 minutes. Remove from heat and let cool for 5 minutes.
    4. Add the mass of the prepared soup and salt, sweet paprika, parsley and pepper in a blender. Blend everything until smooth. Add more water if needed. Delicious!
