    Gingered Carrots

    Ginger has been an important ingredient in Ayurvedic recipes since ancient times.
    This carrot and ginger snack is suitable for both a festive and an ordinary evening!


    Ingredients:


    2 cups carrots, cut into strips
    2 tablespoons of freshly grated ginger root
    2 tablespoons of brown sugar
    1 tablespoon of melted ghee
    ½ teaspoon of your favorite spice blend
    Salt to taste

    Directions:


    1. Boil the carrots in water with a mixture of spices for about 3 minutes. Remove from heat and set aside.
    2. Heat ghee in a separate pan and add ginger and brown sugar. Simmer for about 3 minutes.
    3. Add the carrots and cook for another five minutes.
