Easy to make avocado toast has many different variations and is suitable for breakfast, snack, lunch and even dinner.
Try this variation on avocado toast with salmon and egg!
Ingredients:
1 avocado
1/4 cup cream cheese
1 teaspoon of lemon juice
Salt and pepper to taste
4 eggs
1 teaspoon olive oil
2 teaspoons of fresh chives
Salt and pepper to taste
4-6 slices of black bread
4-6 pieces of smoked salmon
Honey mustard sauce (or other sauce of your choice)
Directions:
1. Mash the avocado with spreadable cheese, lemon juice, salt and pepper. Set aside.
2. Beat the eggs. Add about 2 tablespoons of water (for fluffier eggs).
3. Prepare scrambled eggs over low heat. Add the fresh chives and season with salt and pepper.
4. Toast the bread, spread it with the avocado mixture, put the prepared eggs and salmon pieces on top and sprinkle with the sauce. Delicious!
