    Oat Flour Banana Bread

    Ingredients:


    2½ cups oatmeal
    2 teaspoons of baking powder
    1 teaspoon of baking soda
    1/2 teaspoon of salt
    3 overripe bananas
    2 eggs
    2 teaspoons of apple cider vinegar
    1 teaspoon of pure vanilla extract
    1/2 cup coconut sugar
    1/4 cup nut butter (such as peanut)

    Directions:


    1. Heat the oven to 180 degrees.
    2. Grease a baking dish with oil and set aside.
    3. Blend two cups of oats in a food processor until it forms a fine flour. Add half a cup of oats, baking powder, baking soda and salt to the food processor and mix gently with a spoon.
    4. In a large bowl, mash the bananas and add the rest of the ingredients. Mix well.
    5. Add the dry ingredients to the wet ingredients and mix well.
    6. Pour the mass into the prepared baking form and bake for 45-50 minutes. Leave to cool. Delicious!
