Juicy pomegranates, cinnamon, and toasted pecans add festive flavor to this simple chicken salad!
Ingredients:
For the salad:
5 cups kale (kale) or other greens of your choice
1½ cups prepared chicken
1 apple
1/2 cup pomegranate seeds
1/2 cup blue cheese
3/4 cup pecans
1 tablespoon of sugar
2 teaspoons of cinnamon
For the salad dressing:
1/2 cup plain Greek yogurt
1 tablespoon of maple syrup
½ spoon of honey
1 tablespoon of olive oil
3 tablespoons of apple cider vinegar
1/4 cup of water
A pinch of salt
A pinch of cinnamon
Directions:
Salad:
1. Wash the kale and place in a large bowl.
2. Cut the chicken into cubes.
3. Peel the apples (optional) and chop them.
4. Cut the cheese into bite-sized pieces.
5. Place the pecans in a saucepan over medium-low heat. Add the sugar and cinnamon and heat until the sugar warms and coats the nuts. Allow to cool.
6. Mix the pomegranate seeds and all other salad ingredients and sprinkle them with salad dressing.
Salad Dressing:
Put all the ingredients in a blender and beat until smooth. Add additional spices to taste.
