    Tomato Soup

    Ingredients:
    1.5 kg of plum tomatoes, cut into quarters
    1 onion, chopped
    8 large cloves of garlic
    2 tablespoons of olive oil
    1½ teaspoons kosher salt (to taste)
    1/2 teaspoon freshly ground black pepper
    1/8 teaspoon ground red pepper (optional)
    1/4 cup full-fat whipped cream
    1/4 cup fresh basil leaves
    2 teaspoons of brown sugar

    Directions:


    1. Heat the oven to 230 degrees. On a large baking sheet, combine the tomatoes with the onion, garlic, olive oil, salt, black pepper and red paprika.
    2. Bake in a preheated oven until completely soft (35-40 minutes).
    3. Transfer this baked tomato mixture to a blender along with the cream, basil and brown sugar. Blend until smooth. Season with salt to taste.
    4. Pour the soup into bowls and garnish with a drizzle of olive oil, ground black pepper and thinly sliced ​​basil leaves.
