Ingredients:
1 teaspoon of olive oil
1 onion, chopped
2 cloves of garlic, chopped
¾ cup uncooked white rice
1½ cups vegetable broth
3½ cups canned black beans, drained
1 teaspoon ground cumin
¼ teaspoon cayenne pepper
Directions:
1. Heat the oil in a saucepan over medium-high heat. Add onion and garlic; stir until onion softens (about 4 minutes).
2. Stir in the rice; heat and stir for 2 minutes.
3. Pour vegetable broth and bring to a boil. Cover, reduce heat to low, and cook until all liquid is absorbed (about 20 minutes).
4. Stir in beans, cumin and cayenne; simmer until the beans are warmed through.
