    Moroccan Vegetable Curry

    Try this vegetable curry inspired by the flavors of Morocco!


    Ingredients:
    1 sweet potato, peeled and diced
    1 eggplant, cut into cubes
    1 green pepper, chopped
    1 red pepper, chopped
    2 carrots, chopped
    1 onion, chopped
    6 tablespoons of olive oil
    3 cloves of garlic, chopped
    1 teaspoon ground turmeric
    1 tablespoon of curry spices
    1 teaspoon ground cinnamon
    ¾ spoon of sea salt
    ¾ teaspoon cayenne pepper
    1 can of chickpeas, drained
    ¼ cup almonds
    1 zucchini, sliced
    2 tablespoons of raisins
    1 cup of orange juice
    300 g of spinach

    Directions:


    1. Place sweet potatoes, eggplant, peppers, carrots, onion and three tablespoons of oil in a large pot. Simmer on medium heat for 5 minutes.


    2. Add 3 tablespoons of olive oil, garlic, turmeric, curry powder, cinnamon, salt, and pepper to a medium-sized pot and sauté over medium heat for 3 minutes.

    3. Pour the spice mixture you just prepared into the large pot with the vegetables. Also add chickpeas, almonds, zucchini, raisins and orange juice. Cover the pot and simmer for 20 minutes.

    4. Add the spinach and cook for another 5 minutes. Delicious!
