    Roasted Beet Salad with Feta

    Easy to prepare beet salad with feta - a great side dish!


    Ingredients:


    4 beets
    ¼ cup chopped shallots (also known as shallots or shallots)
    2 tablespoons of minced fresh parsley
    2 tablespoons of olive oil
    1 tablespoon of balsamic vinegar
    1 tablespoon of red wine vinegar
    salt and pepper to taste
    ¼ cup crumbled feta cheese

    Directions:


    1. Heat the oven to 200 degrees.
    2. Wrap each beet in aluminum foil and place on a baking sheet.
    3. Bake the beets in the preheated oven until they are soft and easily pierced with a fork (45-60 minutes). Allow the beets to cool. Peel the beets and cut them into slices.
    4. While the beets are cooking, mix the garlic, parsley, olive oil, balsamic vinegar and red wine vinegar in a bowl; season with salt and pepper and set aside.
    5. Serve warm, sliced ​​beets on a plate, sprinkle with prepared salad dressing and sprinkle with feta cheese.
