    Black Bean and Couscous Salad

    Ingredients:
    1¼ cups chicken broth
    1 cup uncooked couscous
    3 tablespoons of olive oil
    2 tablespoons of fresh lime juice
    1 teaspoon of red wine vinegar
    ½ teaspoon ground cumin
    2 cans of black beans, drained
    8 onion leaves, chopped
    1 red bell pepper, pitted and chopped
    1 cup frozen corn
    ¼ cup chopped fresh coriander
    salt and pepper to taste


    Instructions:
    1. Boil the broth. Stir in the couscous, cover the pot and remove from the heat. Let stand for 5 minutes.
    2. In a large bowl, mix olive oil, lime juice, vinegar and cumin. Add beans, onion leaves, bell pepper, corn and coriander, mix again.
    3. Fluff the couscous with a fork, place in a salad bowl and mix well. Season with salt and pepper. Serve immediately or refrigerate. Delicious!
