Lemon rice is one of the most popular dishes in South India. This rice is usually eaten on its own or with raita (yogurt sauce), yogurt, chutney (sophisticated condiment) or salad.
Ingredients:
1 teaspoon of coriander seeds
2 tablespoons of vegetable oil
1 teaspoon of mustard seeds
3-4 curry leaves
2 green chilies, sliced lengthwise
1 small piece of ginger, grated
1/2 cup roasted unsalted peanuts
1 teaspoon of turmeric powder
Juice of 2 medium lemons
2 cups of cooked basmati rice
Salt, to taste
Production:
Directions:
1. Toast the coriander seeds in a large pan over medium heat until fragrant (about 1 minute). Set the toasted seeds aside.
2. In the same pan, heat the oil over medium heat. Add and lightly fry the mustard seeds, curry leaves and green chillies.
3. Add ginger and peanuts. Fry the mixture until the delicious aroma spreads.
4. Stir in the turmeric powder and turn off the heat.
5. Squeeze in the lemon juice and mix well.
6. Add the cooked basmati rice, roasted coriander seeds and salt to taste. Mix everything well. Delicious!
