    Soft Pumpkin Cookies

    Ingredients:
    1 cup of white sugar
    2 tablespoons of butter
    1 cup pumpkin puree
    ½ cup chopped walnuts
    1 large egg, beaten
    1 teaspoon of vanilla extract
    2 cups of all-purpose flour
    1 teaspoon of baking powder
    ½ teaspoon of salt

    Directions:


    1. Heat the oven to 190 degrees. Lightly oil a baking tray.
    2. Mix sugar and butter until smooth. Stir in pumpkin puree, egg, chopped walnuts and vanilla. Then add flour, baking powder and salt. Mix everything well.
    3. While shaping the cookies, spoon the dough onto the prepared cookie sheet. Bake in the preheated oven until the edges of the cookies are lightly browned (about 15 minutes). When the cookies are done, take them out and let them cool.
