Try this easy Lebanese pilaf recipe.
Ingredients:
2 tablespoons of olive oil
1 finely chopped onion
¼ cup tomato paste
1 tomato, finely chopped
¼ finely chopped green pepper
1 ½ cups bulgur grits
1 teaspoon cumin
1 teaspoon of salt
½ tsp black pepper
1 can of chickpeas, washed and drained
3 cups of chicken broth
1 tablespoon of finely chopped parsley
Directions:
1. Heat the olive oil in a large pot over medium heat. Add the onions and cook until soft and translucent (about 5-7 minutes).
2. Stir in the tomato paste, chopped tomatoes and green peppers and continue to cook with the onions until fragrant (about 2-3 minutes).
3. Add bulgur, cumin, salt, pepper and stir until the bulgur is completely covered with tomato paste (about 2-3 minutes).
4. Add chickpeas and 3 cups of chicken stock or water on top and mix. Remove from the heat, cover and let the bulgur absorb the liquid (about 10 minutes). Remove the lid and fluff the grits with a fork.
5. Serve with chopped parsley and fresh vegetables.
