Ingredients:
2 x 400 g packs of tofu, drained and cut into 2-3 cm cubes
1 tablespoon ghee butter
2 teaspoons of sesame oil
2 tablespoons of sesame seeds
3 tablespoons of soy sauce
½ onion, diced
3 cloves of garlic, chopped
1 tablespoon of chopped fresh ginger
1 carrot, chopped
1 zucchini, cut into 2-3 cm pieces
2 cups of cooked basmati rice
Directions:
1. Melt the ghee over medium-high heat. Add the tofu and drizzle with one tablespoon of soy sauce. Stir until browned on all sides.
2. Add carrots, garlic, onion and ginger - cook for one minute.
3. Add the zucchini and the rest of the soy sauce and cook for another two minutes.
4. Stir in sesame seeds and sesame oil.
5. Serve with basmati rice. Garnish with sesame seeds. Delicious!
