    Vegetable Barley Soup

    Ingredients:


    2 tablespoons ghee butter
    2 teaspoons of your favorite spice mix of your choice
    2 stalks of celery, chopped
    2 carrots, finely chopped
    1 cup chopped green beans
    ⅓ cup of pearl barley, 4 glasses of water
    1 bay leaf
    ½ teaspoon dried basil
    ¼ teaspoon dried thyme
    1 teaspoon of salt
    A pinch of freshly ground black pepper

    Directions:


    1. Heat the ghee in a large pot and sauté the spice mixture for 30 seconds.
    2. Add celery and carrots, sauté for 5 minutes.
    3. Add the remaining ingredients and bring to a boil.
    4. Cover, reduce heat and cook slowly, stirring occasionally, until pearl barley is tender (about 2 hours).
    Note: You will cut down the cooking time significantly if you make this soup in a pressure cooker.
