Try these White Chocolate Macadamia Nut Cookies! You can store them in an airtight container at room temperature for up to four days, and in the refrigerator for up to one week.
Ingredients:
1 cup butter, melted
¾ cup brown sugar
½ cup white sugar
2 large eggs
½ teaspoon of vanilla extract
½ teaspoon of almond extract
2 ½ cups all-purpose flour
1 teaspoon of baking soda
½ teaspoon of salt
1 cup coarsely chopped macadamia nuts
1 cup of coarsely chopped white chocolate
Directions:
1. Heat the oven to 180 degrees.
2. In a large bowl, beat the butter, brown sugar and white sugar with an electric mixer until light and fluffy. Beat in the eggs one at a time, then mix in the vanilla and almond extracts.
3. In another bowl, mix flour, baking soda and salt. Gradually stir this flour mixture into the butter mixture; add macadamia nuts and white chocolate.
4. Scoop the dough with a spoon and place it 5 cm apart on the baking sheet.
5. Bake in a preheated oven until golden brown (about 10 minutes).
