These chocolate chip cookies only need a few ingredients, so they're super quick to make.
Ingredients:
1 large egg
1 cup (250 g) almond or peanut butter, room temperature or cold (but not warm)
1/2 cup (90 g) brown sugar
1 teaspoon of baking soda
1/2 teaspoon pure vanilla extract (optional)
1 cup (190 g) chocolate chips
Directions:
1. Preheat the oven to 180°C and line two large baking trays with baking paper.
2. In a medium bowl, beat the egg. Stir in the almond butter, then the brown sugar, baking soda, and vanilla (if using). Mix everything very well. Add the chocolate chips.
3. Hang the dough with a fork and shake it on the prepared baking sheet (about 1½ tablespoons per cookie). Gently press the balls of dough with the back of a spoon. If desired, press a couple more chocolate chips on top of each ball.
4. Bake for 10 minutes. The cookies will look very soft - as they should be! To make the cookies crispier, you can bake them for up to 12 minutes. After removing from the oven, you can press a couple more chocolate chips into the top of each cookie.
5. Allow the cookies to cool. You can store the cookies tightly covered and at room temperature for up to 7 days.
