    Sweet Potato Salad

    A healthy sweet potato salad with avocado is a great side dish. You can enjoy this salad both warm and cold.

    Ingredients


    To prepare sweet potatoes:
    2 medium sweet potatoes, peeled and cut into 1cm cubes (about 2 cups; about 550g)
    1 tablespoon of olive oil
    1 teaspoon ground sweet pepper
    1 teaspoon of garlic powder
    ½ teaspoon kosher salt and black pepper (to taste)
    ¼ cup red onion, diced
    4 cups of mustard
    100 g of avocado, chopped into cubes

    For the salad dressing:
    2 tablespoons of olive oil (you will need an additional 1 teaspoon)
    1½ tablespoons of apple cider vinegar
    1 teaspoon of honey
    1 teaspoon kosher salt (you'll need an extra 1/8 teaspoon)
    1 teaspoon cumin

    Instructions


    1. Heat the oven to 200 C.
    2. Place the sweet potato cubes on the baking sheet. Drizzle with olive oil and toss. In a small bowl, combine paprika, garlic powder, 1/2 teaspoon salt, and black pepper.
    3. Sprinkle the spice mixture over the potatoes and mix. Bake for 13-15 minutes, stir, then bake for another 13-15 minutes or until tender.
    4. While the sweet potatoes are cooking, combine the salad dressing ingredients in a large bowl and add the onions.
    5. Remove the baked sweet potatoes from the oven and, while still hot, place them in a large bowl with the salad dressing, then allow to cool for at least 5 minutes.
    6. When cool, add the oregano, 1 teaspoon olive oil, and 1/8 teaspoon salt and mix well.
    7. Divide the prepared salad into 4 bowls, you can add salt and pepper to taste. Season the salad with pieces of avocado.
