    Avocado Toast with Egg – Four Ways

    Here are 4 ways to make avocado toast with an egg: scrambled, poached, hard-boiled or fried.

    Ingredients:

    1 slice of whole grain or gluten-free bread, toasted
    1/4 small avocado, mashed
    oil
    1 large egg
    kosher salt and black pepper (to taste)
    hot sauce or red pepper flakes (as needed)

    Directions:

    Mash the avocado in a small bowl and season with salt and pepper.


    1. Sunny Side Up Egg
    Heat a small pan over low heat, coat with oil (or use butter) and gently crack the egg into the pan. Cover and heat until the yolk is the desired texture.


    2. Hard Boiled Egg
    Place the egg in a pot and add enough cold water to cover 2-3 cm of the pot.
    Boil water over medium heat. When the water boils, turn off the stove and cover the pot for 20 minutes - the egg will finish steaming. Hold the egg under running cold water to cool the egg, then peel it.


    3. Scrambled Egg
    In a small bowl, beat the egg with a fork and season with a pinch of salt. Heat a small pan over low heat. When the pan is hot, coat it with oil (or use butter) and pour in the egg. With slow movements, we sweep the spatula from the edges of the pan towards the center and cook in this way until the texture of the eggs at the bottom near the bottom of the pan is already firm, but the top is still moist (about 2-3 minutes).


    4. Poached Egg
    Boil a small pot of water. Crack the egg into the bowl. When the water is boiling, add 1 teaspoon of white vinegar to the water and stir in a circular motion until a swirl forms. Lower the heat, then carefully place the egg in the center of the pot and cook for 3-4 minutes, until the yolk is cooked to your liking. Remove the egg with a slotted spoon and place on a paper towel.


    For the avocado toast:

    Put mashed avocado on a slice of bread, put a prepared egg on top, sprinkle with salt and pepper. Season with hot sauce or red pepper flakes if desired.
