    This winter salad is a great holiday dish and is so easy to throw together.

    2 cups kale or arugula

    1 sweet potato, sliced and roasted

    ½ honey crisp apple, thinly sliced

    ¼ cup pumpkin seeds

    ¼ cup dried cranberries or tart cherries

    ¼ cup pecans

    ½ avocado

    Vegan cheese

    Crackers of your choice

    Instructions

    Combine ingredients in a large bowl. Top with vegan cheese and crumbled crackers of your choice. I love pairing this with a sweet mustard dressing or a honey garlic vinaigrette!
