These are quick and easy healthy sugar-free balls.
A great post-workout snack!
Ingredients:
1 cup (150 g) pitted Medjool dates, i.e. about 12-14 Medjool dates (other types of dates should work)
2/3 cup (150 g) rolled oats (or instant oatmeal; use gluten-free oats if needed)
1/3 cup (45 g) almonds (any nuts work, like pecans, walnuts, or even seeds like hemp seeds, sunflower seeds, or pumpkin seeds)
For extra flavor:
1 teaspoon vanilla extract
1/2 teaspoon cinnamon
1 pinch salt
Instructions:
1. Place Medjool dates in a bowl and cover with water. Cover bowl. Let stand for 5 minutes.
2. Drain water through a sieve. Gently press dates with your hands to remove water. Place in the bowl of a food processor fitted with the S-blade.
3. Add the almonds, oatmeal and any additional flavourings of your choice.
4. Process on high speed until a sticky dough forms, usually about 1 minute.
5. Stop the food processor, remove 1 tablespoon of the dough and form a ball with your hands. If the dough is a little too dry or not sticking well, process again and add 1 teaspoon of water to the food processor bowl. Process again to combine, then form into balls.
6. Form into 9 balls. Refrigerate for 30 minutes to firm up. Store in an airtight container in the fridge for up to 1 month.
