Grilled Zucchini with Parmesan Cheese and Herbs – a quick side dish that goes well with a variety of main courses!
Ingredients:
4 medium-sized zucchini
1 tablespoon extra virgin olive oil
1 teaspoon Italian seasoning (optional)
1 teaspoon salt
1/2 teaspoon ground black pepper
Half a small lemon, juiced
2 tablespoons freshly grated Parmesan cheese
Directions:
1. Preheat a gas or charcoal grill to high (200–230°C). Cut off the ends of each zucchini and cut them lengthwise into four pieces (you will have four such “sticks” from each zucchini). Place on a baking sheet.
2. Drizzle the zucchini with olive oil and sprinkle with Italian seasoning (if using), salt, and pepper.
3. Place the zucchini on the grill with one of the cut sides touching the grill. Cook for 4 minutes, until dark grill marks appear.
4. Flip the zucchini over to the other side (skin side down). Cook for another 5 minutes. You can then flip it over to the remaining uncooked cut side (and cook for 1-2 minutes) if you want to get grill marks on all surfaces (this is not necessary). Then transfer to a baking sheet or serving plate.
5. Squeeze lemon juice over the top and sprinkle with Parmesan cheese.
