    Almond Flour Energy Balls

    Gluten-free, egg-free, dairy-free and refined sugar-free!

    Ingredients:


    3/4 cup rolled oats (gluten-free if desired)
    1 cup almond flour
    2 tablespoons almond milk (for different flavors, substitute almond milk with another liquid, such as lemon juice, orange juice, coconut milk)
    1/3 cup maple syrup (but any liquid sweetener, such as agave syrup or coconut nectar, will do)

    For extra flavor (optional):
    1/2 teaspoon vanilla extract
    1/4 teaspoon almond extract
    1/3 cup chocolate chips (or chopped nuts)

    Instructions:


    1. In a bowl, combine rolled oats, almond flour, maple syrup, almond milk, and almond and vanilla extract (if using).
    2. Mix first with a rubber spatula, then lightly oil your hands and press the dough together to make it come together nicely. If the dough is too dry, add a little more almond milk. If it is too wet, add a little more almond flour. The dough should be the right consistency for forming balls.
    3. If you want to add chocolate chips, add them now and mix to distribute evenly.
    4. Roll about 1 tablespoon of the dough into a ball between lightly oiled hands. Repeat until there is no dough left – you should have about 10 balls.
    5. Place the balls in an airtight container and refrigerate to set.
